Our Chais

With no pretention and far removed from ultra-modern equipment, our cellar has a traditional feel. Set out over time, the space is shared between a vatroom of concrete vats and a maturing cellar in the oldest part of our chais where our old wooden tuns nestle.
However traditional the vinification is at La Millière, it is first and foremost the instinct of the winemaker that fashions the personality of our wine. Ever attentive to his terroir and the rhythm of each vintage, Michel composes a unique score for each of his cuvées by playing on the subtle balance between the typicity of his terroirs and the natural expression of each grape variety planted there. Then, to mature his wines, Michel chooses the style suited to each individual personality. While our Côtes du Rhône complete their slow maturing in vats to retain their fresh, fruity characteristics, our future Châteauneuf-du-Pape Cru weds our old tuns to peaceably fill out over 12 to 15 months.
